Put a little South in my dinner

Tonight's menu: 
Whole chicken all day in the crockpot
Collard greens
Boiled beets with sea salt and butter 

It was excellent! My first time making collards and I loved them. I could have set the chicken and beets aside and eaten that entire bowl of greens. To my two year old the beets were "red potatoes" and after eating one he told me that he did in fact like red potatoes.

Toddler ... Well I got a point for the red potatoes tonight!
